Assyrtiko with 5% Athiri and Aidani from Pre-phylloxera rootstock. Santorini is known globally for both its stunning views of the sunset overlooking the Kaldera (volcanic depression) as well as its coveted dry white wines made from the native Assyrtiko grape. This grape varietal is one of the few crops that flourishes in the island's challenging climate. Kaldera Assyrtiko is produced from 60+ year old vines grown under strenuous conditions of high heat and volcanic soils. This creates a wine full of minerality, vibrant acidity, length and unique texture. It can be enjoyed on its own or paired with seafood, shellfish, or white meat.
