"The NV Extra Brut Blanc de Noirs is a pure Pinot Noir largely fermented in oak with most of the wines having avoided malolactic fermentation. Creaminess and creamy oatmeal surround slight hints of plum on the nose. The rich and concentrated palate, with salty soy edges and caramelized apple, makes for intense savoriness. With Pinot-structure and undoubted power, this is nonetheless elegant and poised with bright, fine acidity. Flavors echo long and freshness simply lasts on this clear-cut, bold yet elegant wine."

Pears and vanilla on the nose of this golden wine. A canon of wealth and power. Unbreakable. To write about the praline and hazelnuts, the baked pears and smoked saffron, the yuzu and hot-candle-wax-on-lemon-peel flavors of this wine is to reduce its xeric colonnades to fragments that do not, cannot, even begin to encapsulate the whole. For this cuvee, the winemaker generally blends 5 to 6 vintages to make sure the cuvee will keep its character.  It is complex, with a slight hint of red fruit, very elegant, offering a longer finis.
