"40% Bourboulenc, 20% Grenache Blanc, 20% Roussanne, 20% Marsanne. Old bushvines on the hard limestone screes of La Clape. Hand-picked, 100% de-stemmed, slow-press, gravity-fed into vats. Varieties vinified separately. Grenache, Roussanne and Marsanne fermented in one- and two-year-old 300-litre French oak barrels. Stirring on fine lees for five to six months. Natural static clarification by gravity, no fining, no filtering. TA 3.3 g/l, pH 3.6, sulphites 60 mg/l. Strict instructions to serve at 14 °C (55 °F).
Crème brûlée and citrus-honeyed nose. Gorgeously rich green-fig-confit flavours. A hint of peach-kernel bitterness towards the end, and ginger spiked. Long and deep and elegant. 17/20 points. (TC)"

"I wanted this wine to express the richness of our 45 years-old Grenache structured by our 60 years-old Bourboulenc.
