Vinification: The Vermentino is hand harvested when their maturation level is verified. The grapes are destemmed, pressed and immediately cooled to 54°F; fermentation in stainless steel tanks for ten days. Aging Process: 7 months on its lees and 3 months in the bottle before the release. Tasting Notes: Color - Straw yellow with greenish hints. Bouquet - Intense with sweet notes of exotic fruit; fresh with notes of magnolia, sambuco and almonds. Flavor - Powerful, full and intense in the mouth with enjoyable acidity; persistent nose with an almond. Pairings - Lovely aperitif and an ideal pairing for fish; excellent complement to grilled shrimp or sea bass, fish soups, oven-baked grouper and cheeses.
