"A sparkling blend of 75% Pinot Nero and 25% Chardonnay, the Ettore Germano 2016 Alta Langa Metodo Classico Extra Brut pours forth with lively foam and fine beading. The luminous sparkler opens to a light gold color with copper highlights. Dried peach, honey and poached pear emerge from the bouquet, giving this wine a versatile and attractive personality. The red grape is fermented in steel and the white grape is fermented in oak. Once assembled, the wine sees 30 months of lees aging."
Vinous Reverie Notes
The Pinot Noir is fermented in stainless steel, the Chardonnay in 3 and 4 year old wooden barrels. Bottling for the secondary fermentation. The fermentation in bottle lasts about 4-6 months. Then the wine stays on the lees for at least a further 30 months. After the time on the lees, bottles are disgorged and topped with sparkling wine only, without adding any "liqueur." Three or four months after disgorgement, the finished wine is ready for release. Tasting Notes: Pale yellow color and a persistent perlage. Yeast, toast, and dried apricots followed on the palate by a full, rich, and long mineral finish.
