"Maceration between 25 and 40 days depending on the batch. ‘If you have a good amount of tannins it will keep the wine fresh for many years. We have large casks that do not impart tannins and our Nebbiolo has little tannins in the skin and much more in the pips. To break the endocarp [the innermost part of the flesh around the pips] you need alcohol and hence the long skin maceration.’ The grapes come from plots at between 450 and 600 m, vinified separately and then blended.
Pale ruby. Pretty, perfumed nose of cherry and wild strawberry and ripe raspberry. Still a little compact and youthful on the nose as well as palate with vibrant raspberry fruit that is still a little austere, and with fantastic, finely sculpted tannins. Lively cranberry finish.
