"The 2021 Cuvée de Silex from Bernard Fouquet’s Domaine des Aubuisières is a lovely young wine that harkens back to the days of yore, as the wine comes in this year at a nicely chiseled twelve percent octane! The beautiful bouquet is vivid in its precision, offering up scents of lemon, quince, white flowers, flinty minerality, citrus peel and a touch of lanolin. On the palate the wine is bright, zesty and full-bodied, with a lovely core, stellar mineral drive and cut, laser-like focus and a long, complex and energetic finish. This is stunning Vouvray Sec! 2022-2050+."

"Vibrant and quite richly textured with notes of pear and apple with good length and balance. I expect it to develop further in bottle. A success for 2021, Cuvée Silex is well suited to chicken and pork dishes. In a career spanning more than 30 years, Bernard Fouquet established his 30ha domaine as one of Vouvray’s best. Fouquet has now retired and Charles Lesaffre has taken over. He used to be commercial director of Vignobles Feray, which includes Château Moncountour in Vouvray."

Bernard Fouquet oversees 65 acres of Chenin Blanc, handed down from one generation to the next, planted on some of the best soils in Vouvray. He is regarded, in France and in the international press, as one of the top three producers in the region today, praised especially for his ability to capture the mineral tones unique to Vouvray’s soil, with the marvelous balance of explosive fruit and titillating sensation of the Chenin Blanc grape. His Cuvee de Silex, from two flint-stone parcels, is done entirely in stainless steel; it is aromatic and fresh on the nose, gentle on the palate, with a tense finish.
