Vinous Reverie Notes
Made up of 100% Lambrusco di Sorbara, the grapes are left to macerate on their skins at low temperatures between 5-7 days after harvest. The first fermentation follows and the wine is aged on its lees for a 3 month minimum time period. The secondary fermentation, or 'Pris de Mousse', takes place through natural in-bottle fermentation and ages for an additional 6 months before release.
