Vinous Reverie Notes
Named after the Colombian national flower, Cattleya is the personal project of Colombian born, French-trained vigneron and winemaker Bibiana Gonzales-Rave Pisoni. Born and raised in Colombia and trained as a winemaker in France, she moved to California in 2007 to settle into making extraordinary wines. Pinot Noir grapes are grown near the Pacific Ocean along the Sonoma Coast. Fruit is harvested at night and immediately sorted at the winery. Following a short cold soak, the juice is fermented in stainless steel, open-top tanks. When fermentation is complete, the wine is drained from the tank and the skins are gently pressed. The resulting wine is aged in both neutral barrels and new barrels for 11 months.
